What’s Cooking: Sea scallops puttanesca

If weather forces your summer parties indoor here’s a nice seafood dish you can cook without grilling. This week sea scallops puttanesca is What’s Cooking.

Sea Scallops Puttanesca

Ingredients

  • 8 large dry fresh sea scallops
  • vegetable oil
  • salt

Sauce

  • tspn extra virgin olive oil
  • 1/2 teaspoon chopped garlic
  • touch of anchovy
  • tspn small capers
  • 1 cup Italian peeled plum tomatoes, broken up
  • pinch of fresh basil
  • touch of dry chile
  • salt to taste

Sea Scallops

  1. Lightly salt the scallops
  2. Heat oil in saute pan until barely smoking
  3. sear the scallops 1 minute per side, until golden brown

Puttanesca Sauce

  1. saute garlic with capers add anchovy
  2. add the tomatoes
  3. bring to a boil, stirring so it doesn’t stick and burn
  4. simmer 10 minutes
  5. finish with Basil and hot pepper to your taste
  6. salt to taste

Assemble

  1. spoon sauce on bottom of plate, not too much
  2. assemble scallops on top
  3. finish with more sauce and basil chiffonade
