Black Eyed Pea – Corn Burger

Yield 4 EA

— 1 Cup Cooked Black eye pea,

— ½ Cup Corn Kernels

— ½ Cup Chick pea Flour

— 1 Cup White Onions, Diced & caramelized

— 2 TBSP Cajun Spice

— 2 TBSP Water

— Salt & Pepper to Taste

Method of Preparation:

— In a food processor puree black eye peas, corn kernels, caramelized onions and water

— Mix to form a loose puree

— In a medium mixing bowl combine Black eye pea mixture and slowly stir in chick pea flour

— Season with Salt & Pepper

— Pickled Cherry Pepper Relish

Yield 2 Cups

— 1 Cup Pickled Cherry Peppers

— 1 Cup Sliced Cherry Tomatoes

— Combine both in a food processor

— Pulse to chop and combine
