At this time of year when there’s not much better than fresh apples and apple cider from a local orchard. This week Sarah French shows us that apple cider bars are What’s Cooking at Boston Common Coffee.
Mulling the cider:
- 1 gallon apple cider
- 4 cinnamon sticks
- 1 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/4 cup brown sugar
- 1 teaspoon cloves
Place all together in a pot and bring to a boil. Remove from the heat and cover for 15 minutes. Strain.
Crust:
- 3 1/2 cups all purpose flour
- 1/2 cup confectioners sugar
- 1 1/2 teaspoons salt
- 1 pound of unsalted butter
- Mix all ingredients together until the mixture becomes a dough.
Press the dough into a parchment lined 17 1/2″ x 12 1/2″ rimmed baking sheet. Bake in a 350 degree oven until golden, 20-30 minutes.
Filling:
- 8 eggs
- 4 cups sugar
- 1 1/2 cups mulled cider
- 2/3 cups flour
- Whisk together the eggs, sugar and flour until combined. Whisk in the cider.
- Pour the filling over the prebaked crust.
- Bake in the same 350 degree oven until the center is set, about 30 minutes, rotating the pan halfway through.
