Gingerbread Pancakes
Makes about 20 pancakes
Ingredients
- 3 Cups All-purpose flour
- 1 Cup packed dark brown sugar or muscovado sugar
- 1 Tablespoon baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground dry ginger
- 1 whole nutmeg (grated with a microplane)
- 1 teaspoon vanilla extract
- 1 Tablespoon Molasis
- 1/2 Cup water
- 2/3 Cup dark coffee
- 4 each heirloom eggs
- 4 oz melted butter
- 1/4 cup fresh squeezed lemon juice
- Clarified butter for cooking the pancakes
