What’s Cooking: Roasted Apple vinaigrette

Roasted Apple vinaigrette 
Serves 4

3 fresh macoun apples (diced small) 
1T thyme (chopped)
1T minced shallot
2T honey
1/2c cider vinegar 
1c vegetable oil
1t salt

Dice the apples and coat in a little oil, salt and thyme. Place in a 375 degree oven on a pan with wax paper for about 6-10 minutes until roasted but not mush and then cool. Now in a mixing bowl add honey and vinegar and wisk lightly until emulsified. Now add the shallots and apples and let them sit for 5 minutes to absorb the vinegar. Add the salt and cover with oil. Before serving mix up With spoon and dress your salad.
