In the latest edition of What’s Cooking, learn how to make short rib tacos with chef Chris Green.
Short Rib Tacos (1 Serving)
Ingredients:
3 corn tortillas
6oz of short rib, medium dice
2 oz of Kentucky BBQ sauce
1 oz of Tomatillo salsa
1/4 oz of Arugula
1 oz pickled onion
6 sprigs of cilantro
Production:
Place the tortillas on griddle to soften
Heat up the shortribs in the sauce
Lay a layer of arugula on bottom of tortilla
Lay meat on top and then onions on top of meat
Place sauce on top and garnish with cilantro
Kentucky BBQ Sauce (2.5 cups)
Ingredients:
2 teaspoons of oil, blended
1.5 oz of onion, 1/4 " dice
.25 oz of garlic, chopped
.5 oz of chili powder
.5tsp of black pepper
.5 tsp of salt
1 cup of ketchup
2 oz of yellow mustard
2 oz of cider vinegar
1 oz of Worcestershire sauce
1 oz of lemon juice
1 oz of steak sauce
1 oz of dark molasses
1 oz of honey
4.5 tbsp of brown sugar
.5 tsp of hot sauce
Production
Heat oil. Add onion and garlic and lightly carmalize
Add dry spices and toast for 30 seconds
Add wet ingredients and simmer for 15 minutes
