  • Boneless chicken breast
  • Panko breadcrumbs
  • Grated Romano Cheese
  • Garlic Powder
  • 1 egg,beaten
  • Flour
  • Olive oil
  • Fresh Mozzarella
  • Fresh parsley
  • Arugula
  • Balsamic glaze

Directions:

Pound out chicken cutlet. Mix panko , grated cheese, garlic powder, salt, pepper and fresh parsley and set aside. Cover chicken in flour dusting off excess flour. Dip chicken in egg first then bread crumb mixture. Heat oil until hot then fry chicken cutlet until brown on both sides. Transfer to metal plate and top with fresh mozzarella and bake in oven at 400 degrees for 5 minutes. While chicken is baking toss the fresh arugula with olive oil, grated cheese and fresh garlic. Set aside .After removing the chicken from the oven top the chicken cutlet and fresh mozzarella with the tossed arugula mix and drizzle balsamic glaze.
