October is breast cancer awareness month, so we’re making a pink dessert with a special guest all for a good cause!

ROX Café’s Raspberry Panna Cotta Dessert


4 cups heavy cream

1.5 cups sugar

10oz. raspberry puree

1 tsp. vanilla extract

7 sheets gelatin (hydrate in ice water)

Fresh raspberries

Crushed biscotti

Chocolate sauce

Raspberry sauce

Whipped cream (can be demonstrated easily)

Mint sprig


Place all ingredients (except gelatin) in a pot and bring to a simmer.

Squeeze gelatin of excess water and whisk into hot cream mixture.

Pour into mold and chill.

On your best plate, add chocolate sauce, crushed biscotti, raspberry sauce, whipped cream, mint sprig.
