It’s almost time for one of the biggest parties of the year Super Bowl Sunday. A lot of people will be hosting or going to parties and we have a great dish that you’ll want to add to your menu!

Habanero Carnitas
Habanero & Beer Braised Pork Shoulder
Corn on the Cob – Papas Rellenas
Smoked Paprika Aioli – Queso Fresco
 
 
For the rub

  • 1 cup smoked paprika
  • 1 cup dried basil
  • 1 cup crushed red pepper
  • ½ cup smoked salt
  • ¼ cup garlic powder
  • ¼ cup cracked black pepper
  • combine all of these and reserve

 
For the carnitas

  • 10 lbs pork shoulder large chunks
  • 5 red onions, chopped
  • ¼ cup  chopped garlic
  • 10 ea habanero (with seeds)
  • 4 bay leaves
  • 2 tsp cumin
  • 2 tsp coriander
  • 3 bu cilantro, chopped
  • chicken stock 1.5 gallons
  • 1 pitcher, PBR
  •  Season at the start and throughout with the above rub

Duck fat to start in a rondo-season the diced pork shoulder with the rub then begin to sear, add red onions, allow to caramelize then add cumin, coriander, bay leaves and lastly garlic until just browned.  Add beer and chicken stock and then bring to a low boil for 10 minutes. Add chopped cilantro- cover with foil- then slowly roast in the oven at 300 degrees.
 
Mayo for corn:

  • 2 cups mayo,
  • juice of one lime,
  • ¼ cup of the rub in mayo
